Todd Simmons, president and COO of Simmons Foods in Siloam Springs, plans to open a restaurant with his wife, Shelley, in the city’s historic downtown.

Executive chef and consulting partner Miles James created the menu for 28 Springs, a casual dining restaurant set in the former Crain Motor Co. building at 100 E. University St.

Using locally sourced ingredients, the menu will range from burgers and sandwiches to entrees such as bacon-wrapped meatloaf, Cuban-style chicken-fried steak, glazed ribs and homemade pasta dishes.

The building, constructed in 1935, will be renovated to include an open-concept kitchen, a news release stated.

Bobby Bennett also will be a chef at the restaurant, which Jarred Blackstone will manage.

Slated to open in late April or early May, the restaurant takes its name from the 28 springs that make up Sager Creek.
