Bordino’s Unveils New Menu
Bordino’s, the upscale Italian restaurant owned by Joe Fennel in Fayetteville, unveiled its winter menu in late October.
Taking a primary spot on the menu is truffles — the underground fungi traditionally uprooted by trained pigs in Europe and served as a delicacy worldwide.
The new menu includes fresh black truffles imported from Umbria, France, and used by chef Juan Barcenas to create “chicken Umbria,” which is chicken breast stuffed with truffles and wrapped in bacon, served with garlic mashed potatoes and a sherry vinaigrette sauce.
Bordino’s is also importing a white truffle oil from Alba, Italy, and two truffle-inspired risotto dishes have also been added to the menu.
