Penguin Ed?s Bar-B-Q to Expand in Crossover Court
Ed Knight, owner of Penguin Ed’s Bar-B-Q, is doubling the size of his restaurant in Fayetteville’s Crossover Court (formerly known as McIlroy Plaza) at the corner of Mission Boulevard and Crossover Road.
Knight is taking over 2,500 SF of space previously occupied by a Mazzio’s Pizza franchise next door. Renovation is scheduled to be complete by mid-April. Knight began working on the new space in early February. The building is owned by Lindsey Management of Fayetteville.
The new space will allow Knight to expand from 80 seats to 130 and greatly increase the size of his kitchen. The new space will also have an area for to-go orders.
“We’re still going to have a line at the door,” Knight said.
Knight started serving his famous Texas barbecue in 1993 from a tent at the site of Crossover Court, before that building existed.
In 1998, Knight purchased B&B Bar-B-Q at 230 S. East Ave. in Fayetteville and renamed it Penguin Ed’s B&B Bar-B-Q.
B&B had been a Fayetteville landmark owned by Betty and William Bassett since it opened in 1960.
